Y is for Yam (Ube)



It’s been a long time since the last time I played with ABC Wednesday meme. Thankful enough that I can able to join today! Well, today’s theme for ABC Wednesday is the letter Y!
I have so much fun with ABC Wednesday because it reminds me of my son who loves recite the ABC’s. He has been learning about ABC since he was 1.5 years old and now he is 2.5, I am so proud that he can able to recite it on his own.

My son has a book of ABC by Dr. Seuss, now; I remembered the letter Y, and its rhyme question that asked “what begins with Y?” It was so much fun that sometimes I was seem like I was learning the ABC’s too by joining ABC Wednesday.
Anyway, here’s my first thought of the letter Y.

Y is for Yam (a famous dessert from the Philippines called “Ube Halaya) made with purple Yam.

Ingredients

• 2 lb ube (purple yam) (you can also buy powdered ube from Asian stores)
• 250 g sugar
• 1 cup sugar (or as desired)
• 1 can condensed milk
• 2 cups coconut milk
• butter

Directions

Boil yam until tender and cut into cubes, then grind in a food processor with sugar and coconut milk (if you have the powdered variety, mix ingredients). Transfer to a sauce pan, add the condensed milk (if starting from fresh) and cook over a low fire, stirring continuously. Continue stirring until the mixture turns into a thick paste and separates from the pan. Transfer to a shallow platter or pan and allow cooling. Serve.
